Our island
Ynys Môn — Anglesey — sits off the north-west coast of Wales. The old saying calls it Môn mam Cymru, the Mother of Wales, for the grain it once grew. We make here because the place is the recipe.

In the batches the island allows.
We work in small batches, by hand, at the pace of the tide and the weather. It’s slower — but it’s the only way the sea and seaweed arrive in the jar still smelling of where they came from.
